For as long as I can remember, I strived for optimum health. As I transition into a new phase of my teaching career, I think that it is important for me to keep up with my healthy eating habits all the while saving precious time. I want to be a role model for my students and taking care of what I put in my body is surely a good way to start. When I encourage my students to take care of themselves, they see that I put into action what I preach.

Since I already know that I will be gloriously busy during the school year, I had to find a way to cook a lot of food in the shortest possible amount of time. A few years ago, I heard about meal preppers. These people would cook an entire week worth of meals in one go. The result is a healthier and more ecological alternative to the processed food sold in stores. I have never tried doing that and it is something that I wanted to explore this year. I found challenging managing my time during the teacher education program. Being constantly busy often left me feeling overwhelmed and exhausted. I found that meal prep helped me overcome these challenges.

As a teacher wellbeing strategy, I created a meal prep cookbook for teachers. The recipes are affordable and quick to cook, and use as little ingredients as possible. My cookbook includes five weeks worth of recipes. Enjoy!
